Heart Healthy PurpleHull Peas (Recipe Version Number 1)
1 qt. purplehull peas
1 tbsp. salt
1/4 cup cooking oil
1/4 cup sugar
Fill a two quart sauce pan half-full of
water.  Place on high heat.  Add salt,
cooking oil and sugar.  Bring to a
rolling boil.  Add peas.  Bring back to
a rolling boil, then turn down heat to
a simmer.  Cover and cook peas on simmer
for 90 minutes.
